Blueberry Oatmeal Bake

Most of the food I cook comes from my memories of my childhood. My dad’s cooking was what I would call comfort food. His baked oatmeal with blueberries is none other than a taste to savor in the mouth. We were poor growing up, but I never knew it. I thought everyone ate as well as we did, but most of the times my friends were eating cold cereal from a box, when I was eating cooked food. Back then I thought it was better to eat a bowl of boxed cereal; I didn’t know how good I had it back then.

Here is what you need to make blueberry oatmeal bake:

2 cups of rolled oats

2 cups of blueberries (canned, fresh, or frozen)

2 eggs, beaten

1/4 cup of butter or margarine, melted

3/4 cup of dark brown sugar

1 teaspoon of salt

3 teaspoons of baking powder

1 cup of blueberry yogurt

1/2 cup of milk

1 cup of applesauce

1 can of blueberry pie filling

1 cup of water

Here is what you do to make blueberry oatmeal bake: 

Preheat oven to 350 degrees. Empty the blueberry pie filling in the bottom of a casserole dish.  In another bowl, add the beaten eggs, applesauce, yogurt, milk, melted butter, brown sugar, salt, baking powder, and then fold in the rolled oats. Spoon this oatmeal mixture over the blueberry pie filling. Cover with aluminum foil and bake for 25 minutes. Then take off the aluminum foil and bake for 28 to 30 minutes. Serve hot with a splash of milk or cream if desired. I like to top mine with a scoop of vanilla ice cream.
